Spinach-Potato Fry



Ingredients:
Spinach - 1 Bunch (Cleaned,Washed & Chopped)
Potatoes - 4 to 5 (Peeled & Diced)
Mustard Seeds - 1 tsp.
Cumin Seeds - 1/2 tsp.
Urad Dhal - 1/2 tsp.
Onion - 1 (Sliced)
Curry Leaves - Few
Red Chilli Powder - 2 tsp.
Coriander Powder - 1 tsp.
Turmeric Powder - 1/4 tsp.
Salt - To Taste
Oil - 2 tbsp.

Method:

Parboil/half-cook the potatoes with 1/2 tsp. of salt to
taste.

Drain the parboiled potatoes and keep it aside.

Heat a pan with some oil and season with mustard
seeds and let it splutter.

Then add urad dal,cumin seeds and curry leaves
and fry for few seconds.

Add sliced onions and saute until they are translucent.

Add chopped spinach and stir fry till  they are almost
dry.

Now add the parboiled potatoes,turmeric powder,
red chilli powder,coriander powder,enough salt and
little water and stir it well.Allow it to cook until the
potatoes are fully-done or fork-tender.

Remove from the stove and serve it hot with rice.

Note : Spinach can be substituted with Fenugreek/Methi Leaves.
