Tomato-Coriander-Mint Chutney


Ingredients:
Tomatoes - 3 to 4
Mint Leaves - 1 Bunch
Coriander Leaves - 1 Bunch
Green Chillies - 2 (Long One)
Red Chilli Powder - 1 tsp.
Salt - According To Taste
Mustard Seeds - 1 tsp.
Cumin Seeds - 1 tsp.
Oil - 3 tbsp.

Method:

Wash the tomatoes,mint leaves,coriander leaves and green chillies thoroughly.

Chop the tomatoes finely and set it aside.Rough chop mint leaves and coriander
leaves and keep it aside.Slit the green chillies and set it aside.

Heat a pan with 2 tbsp. of oil and add chopped tomatoes,green chillies,mint
leaves,coriander leaves,red chilli powder and salt and stir it well.

Allow it to cook till the tomatoes are mushy and the raw smell and taste of
the tomatoes fades away.

Let it cool for 10 to 15 mins.Then grind into a smooth paste.

Heat a pan with a tbsp. of oil and when its smoking hot add mustard seeds
and let it pop.Then add cumin seeds and fry for a minute.

Add this seasoning to the chutney.Serve it with idli,dosa,vada.
