Basundi is traditionally an Indian milk based sweet,known for its taste
and texture.
Ingredients:
Milk – 1 Litre
Sugar - 1/2 Cup (Adjust according to your taste)
Cardamom - 4 to 5 (Powdered)
Charoli/Sara Parupu - 1 tbsp. (Chopped)
Almonds - 6
Lemon Juice - 5 Drops
Method:
Heat the milk in a wide,flat bottomed and non-stick pan.
It should be stirred at the surface against the vessel so that it
evaporates quickly.

When the milk thickens and becomes creamy,squeeze in the
lemon juice.
The milk will become slightly granular,add sugar and boil for
10 more minutes .
Pour into a bowl and garnish with powdered cardamoms,charoli
seeds or sara parupu and almonds (blanched and sliced).

Note :
1.Almonds can be substituted with chopped Pistachios.
2.Saffron strings can also used.Soak few saffron strings in little warm milk.
When milk is reduced to one third in volume approximately,add the sugar,
dissolved saffron and cardamom powder in the boiling milk and stir.
3.Milk boiling time may be increased or decreased depending on the
consistency you need.
4.Use fresh milk with high fat content for better taste and texture.
5.Homemade/store bought milk khoya can also be used along with
the milk.
