Ingredients:
Cooked Rice - 2 to 3 Cups
Mangoes - 2 (Grated)
Whole Red Chillies - 4 (Split into half)
Green Chilli - 1 (Long One - Slit)
Curry Leaves - Few Stalks
Mustard Seeds - 1 tsp.
Cumin Seeds - 1 tsp.
Urad Dhal - 1 tsp.
Channa Dhal - 1 tsp.
Turmeric Powder - 1 tsp.
Asafoeida/Hing - 1 Pinch
Salt - According To Taste
Sesame/Gingelly Oil - 2 tbsp.
Coriander Leaves - Few (For Garnishing)
Roasted Peanuts - 1/2 cup (To Garnish).
Method:
1)Grate mangoes with a cheese grater and set it aside.
2)Heat a pan and dry roast some peanuts/groundnuts for a while.Keep it aside.
3)Heat a thick bottomed vessel with sesame oil and add mustard seeds and let it pop.
4)Then add cumin seeds,urad dhal,channa dal,curry leaves,whole red chillies,slighted green chilli,asafoetida/hing,grated mangoes,turmeric powder and some salt and stir it well.
5)Let it cook for 5 mins.
6)Now add the cooked rice and mix it thoroughly.Allow it cook for another 2 mins.
7)Check for seasoning.
8)Remove from the fire and garnish it with some coriander leaves and roasted peanuts/groundnuts.
Note: 1)I did not add roasted peanuts since i didn't have it at home.
2)If you are allergic to peanuts you can avoid it.
