Ingredients:
Potatoes - 500 gms (Peeled,Boiled and Diced)
Mixed Veggies - 1 Cup (Carrots,beans,peas,
cauliflower - Cooked)
Onions - 1/2 Cup (Chopped - Reserve 3 tsp. of chopped
onions for garnishing)
Green Chillies - 4 (Slit Lengthwise)
Ginger - 1/2 (Sliced)
Tomato - 250 gms (Chopped)
Ginger-garlic Paste - 1 tsp.
Red Chilli Powder - 1 tsp.
Garam Masala - 1 tsp.
Coriander Leaves - 1 Bunch (Chopped Finely)
Lemon Juice - 2 tbsp.
Lemon Wedge - To Garnish (Optional)
Buns - 4
Ghee - 1/2 Cup
Butter - 5 tbsp.
Salt - To Taste
Method:
Heat a pan with some ghee and add the chopped onions (reserve 3 tsp. of chopped
onions for garnishing) and fry the remaining onions till they are light brown.
Add finely chopped green chillies,sliced ginger and chopped tomatoes and saute
over medium heat for 2 to 3 minutes.
Reduce the heat and then add the red chilli powder,mixed vegetables and potatoes
and stir it well.
With a metal spatula,simultaneously mash and stir for 5 mins.
While stirring,keep sprinkling the ginger-garlic paste (dissolved in 6 tbsp. of
water).
Add salt and 2/3 of butter.Increase the heat and stir it well.
Sprinkle some garam masala,finely chopped coriander leaves and lemon juice.
Mix it well till all the veggies are well blended.
Remove from the fire and garnish with the reserved/remaining 3 tsp. of chopped
onions and keep it aside.
Apply the remaining butter on the bun-halves and place them on a pre-heated
frying pan and fry until golden brown on both sides.
Serve it hot with the bhaji and a lemon wedge.
