Ingredients:
Carrots - 1 Lb (Grated)
Milk - 1 Litre
Sugar - 1/2 Cup
Cardamom Powder - 1/4 tsp.
Cashewnuts - 10
Ghee - 1 tbsp.
Method:
Heat a pan with some ghee and roast the cashewnuts until
golden brown and keep it aside.
Heat a thick bottomed vessel and add the grated carrots and
saute it for few mins.
Then add milk and let it cook for about an hour in low flames.
Add cardamom powder and stir it well in medium flames and
then lower the heat after the mixture starts boiling.
Heat until almost dry.Now add sugar,mix and continue to
cook until the halwa is semi dry.
Remove from the fire and garnish with roasted cashwenuts.
