Beetroot Poriyal


Ingredients:
Beetroot - 4
Onion - 1
Curry Leaves - Few
Garlic Cloves  - 4 (Crushed)
Red Chilli Powder - 1 tsp.
Turmeric Powder - 1/4 tsp.
Mustard Seeds - 1 tsp.
Cumin Seeds - 1 tsp.
Urad Dal - 1/2 tsp.
Salt - According To Taste
Oil - 2 tbsp.

Method:

Peel the skin off from the beetroot and chop into desired pieces.Set it aside.

Chop onion finely and crush garlic cloves.Keep it aside.

Heat a pan with 2 tbsp. of oil and add mustard seeds and let it crack.

Then add cumin seeds,urad dal and curry leaves and fry for few seconds.

Add onion and a pinch of salt and saute until the onion is transculent.

Now add turmeric powder,red chilli powder,enough salt and 1/4 cup of water
and stir it well.

Cover and cook till the beetroot is tender and the water has evaporated completely.

Add crushed garlic and cook for another 2 to 3 mins.Check for seasoning.

Remove from the fire and serve it with sambar rice.
