Snake Gourd Poriyal




Ingredients:
Snake Gourd/Pudalungai - 4 (Medium)
Onion - 1 (Medium - Finely Chopped)
Garlic Cloves - 2 (Crushed)
Whole Red Chillies - 2 (Split into 1/2)
Asafoetida - 1/4 tsp.
MTR Sambar Powder - 1 tsp.
Mustard Seeds - 1 tsp.
Urad Dal - 1/2 tsp.
Curry Leaves -Few
Coriander Leaves - Few
Salt - To Taste
Oil - 2 tbsp.

Method:

Cut the snake gourd/pudalungai into half and remove the seeds
and chop into small pieces.Set is aside.

Chop the onions finely and crush the garlic cloves.Keep it aside.

Heat a pan with some oil and add mustard seeds and let it splutter.

Add urad dal,red chillies,asafoetida and curry leaves and fry for a min.

Then add the chopped pudalungai/snake gourd,MTR sambar podi and
enough salt and stir it well.

Cover and cook until the snake gourd is tender and well done.

Check for the seasoning.Adjust if necessary.

Remove from the fire and transfer it to a serving bowl.

Garnish with some coriander leaves and serve it with rice.
