Apple Kheer




Ingredients:
Red Apples - 2 (Medium - Grated)
Milk - 5 Cups
Sugar - 1/2 Cup
Elaichi/Cardamom Powder - 1/2 tsp.
Almonds/Badam - 5 (Blanched & Sliced)
Pistachios - 6 (Blanched & Sliced)
Cashewnuts - 8 (Roasted in ghee)
Raisins/Dry Grapes - 8 (Roasted in ghee)
Ghee - 1 tbsp.


Method:

Bring 5 cups of milk to a boil in a thick bottomed pan and simmer till it thickens.

Wash the apples nicely and grate it thickly without peeling the skin off.

Heat another pan and add the grated apples and cook on medium flame.

Add 1/2 cup of sugar to the grated apples and stew till the sugar dissolves
and continue to cook till most of the mositure evaporates.

Add some of the reduced milk to the apples and sugar mixture and
let it cook.

As the mixture thickens,add the remaining milk to the apples and sugar mixture
and let it cook till the kheer thickens some more.

Add 1/2 tsp.of cardamom powder,5 almonds/badam,6 pistachios
and continue to cook till the kheer thickens to a desired consistency.

Heat a small pan and add 1 tbsp. of ghee and when its hot,add
the cashewnuts and roast it until golden brown.Drain it and keep
it aside.

In the same hot ghee,add the raisins/dry grapes and roast till they
pop.Drain it.

Add the roasted cashewnuts and raisins to the kheer and cool it.

Serve the apple kheer chilled.
