Pepper Mushroom Fry



Ingredients:
Button Mushroom - 1 Packet
Onion - 1(Large - Finely Chopped)
Tomatoes - 2(Small - Finely Chopped)
Ginger-garlic Paste - 1 tbsp.
Curry Leaves - Few Stalks
Coriander Powder - 2 tsp.
Black Pepper Powder - 1 tsp.
Garam Masala - 1/4 tsp.
Turmeric Powder - 1/4 tsp.
Mustard Seeds - 1 tsp.
Cumin Seeds - 1/2 tsp.
Fennel Seeds - 1/2 tsp.
Salt - To Taste
Oil - As Required
Coriander Leaves - To Garnish.


Method:

Clean the button mushrooms with a wet kitchen towel or paper towel.

Remove the stems and chop it into medium pieces.Set it aside.

Chop the onions and tomatoes finely and keep it aside.

Grind the ginger and garlic into a fine paste.Set it aside.

Heat a small pan and dry roast some coriander seeds until a nice aroma exists.
Let it cool and grind it into a fine powder.Set it aside.

In the same pan,dry roast some black peppercorns until a nice aroma exists.
Let it cool and powder it finely.

Heat another pan with some oil and when its hot,add the mustard seeds and
let it crack.

Then add cumin seeds,fennel seeds,chopped onions and curry leaves and fry till the
onion changes its color.

Add chopped tomatoes and let it cook till they are mushy.

Now add some turmeric powder,freshly grounded coriander powder,
freshly grounded black pepper powder and garam masala and stir it well.

Let it cook till the mixture is dry and the oil separates from the masala.

Add chopped mushrooms and enough salt and mix it well.Always add salt
at the end to avoid the mushrooms getting soggy.Keep stirring frequently.

Allow it to cook until the mushrooms are well done.Check for the seasoning
before removing from the fire.Adjust salt and spice if necessary.

Garnish with some coriander leaves and serve it with rasam rice or sambar rice
or  chapathi/roti.


Note : Freshly grounded coriander powder and black pepper powder
           enchances the taste.
