Mutton Curry


This is a delicious mutton curry that can be prepared within
20 minutes.

Ingredients:
Mutton - 1 Kg/2.2 Lb
Onions - 2 (Sliced)
Tomatoes - 2 (Chopped)
Whole Red Chillies - 15
Garlic - 2 Cloves (Minced)
Ginger - 2 " Pieces (Grated)
Turmeric Powder - 1/4 tsp.
Coriander Seeds - 1 tsp.
Cloves - 4
Cinnamon Sticks - 2
Cumin Seeds - 1 tsp.
Coconut - 10 Pieces
Poppy Seeds/Khus Khus - 2 tsp.
Salt - To Taste
Oil - 3 tbsp.

Method:

In a small pan,dry roast the cumin seeds,coriander seeds and whole red chillies
until a nice aroma exists.Let it cool  and grind it into a fine powder.Keep it
aside.

In the same pan,dry roast the grated coconut until golden brown.Put it in a
bowl.Then dry roast the poppy seeds until light brown.

Let the roasted coconut and the poppy seeds to cool for sometime.

Then blend it into a smooth paste and keep it aside.

Heat oil in a pressure cooker and add the whole spices (cloves,cinnamon
sticks and cumin seeds) and fry for few seconds.

Add the sliced onions and continue to fry till they are golden brown.

Add the ground powder and stir it well.Let it cook for a min or so.

Then add the grated ginger and minced garlic and fry for 2 mins.

Add the mutton pieces and saute for few more mins.

Now add some turmeric powder,chopped tomatoes and the ground paste
of coconut and poppy seeds/khus khus and fry it for another 5 mins.

Add enough salt and 2 cups of water.Cover and cook for 15 mins.

Check for the seasoning.Adjust if necessary.

Garnish with some coriander leaves and serve it hot with plain rice or
vegetable pulo/biryani or chapathi/roti.
