Chicken -Vegetable Soup

Ingredients:
Chicken Tenderlions - 1 Lb (Cubed)
Onion - 1 (Large - Chopped Finely)
Tomatoes - 2 (Small - Chopped Finely)
Ginger-garlic Paste - 1 tbsp.
Curry Leaves - Few Stalks
Carrots - 1 Cup
Green Beans - 1 Cup
Frozen Green Peas - 1/4 Cup
Frozen Sweet Corn - 1/4 Cup
Whole Black Peppercorns - 1 tbsp.
Fennel Seeds - 1 tsp.
Cumin Seeds - 1 tsp.
Turmeric Powder - 1/4 tsp.
Black Pepper Powder - 1/2 tsp.
Swanson's Chicken Broth/Water - 5 to 6 Cups
Coriander Leaves - Few (To Garnish)
Salt - According To Taste
Olive Oil - 2 tbsp.


Method:

Clean the chicken and chop into small cubes.Keep it aside.

Heat a pressure cooker with 2 tbsp. of olive oil and add cumin seeds,fennel seeds
and whole black peppercorns and fry for few seconds.

Then add chopped onions,curry leaves and a pinch of salt and saute till the onions are
transculent.

Add ginger-garlic paste and fry till the raw smell goes away.

Now add chopped tomatoes,turmeric powder,black pepper powder and enough salt
and cook till the tomatoes are mushy.

Add the chicken cubes,carrots,green beans,green peas,sweet corn  and 5 to 6 cups
of Swanson's Chicken Broth/Water and stir it well.

Cover the pressure cooker and cook for 4 to 5 whistles.

When the pressure of the cooker is released,strain the soup in a large bowl using a
strainer/colander.

Garnish with some coriander leaves and serve it hot.


Note:

1)This soup is good for cold,cough,common cold and flu.

2)You can use the cooked veggies and chicken cubes for another
   dish instead of discarding/throwing  it away.

3)Swanson's Chicken Broth is available in Walmart.Just make sure
   no MSG/Ajinomoto is added in the Broth.Also use less sodium
   chicken broth.

4)You can substitute water with chicken broth.

5)Using chicken broth enchances the flavor of the soup.

6)You can also use vegetable broth instead of chicken broth.


Tip:

Wash your hands with soap and warm water and dry your hands nicely
before touching other ingredients to avoid bacteria/germs entering into
your food.
