Brinjal/Eggplant With Spicy Gravy



Ingredients:
Brinjal/Eggplant - 200 gms
Onions - 2 (Chopped Finely)
Green Chillies - 3 (Chopped Finely)
Black Pepper Corns - 6 to 8
Tamarind - Amla/Gooseberry Size
                 (Soaked in hot water)
Mustard Seeds - 1 tsp.
Cumin Seeds - 1 tsp.
Cumin - Fenugreek Powder - 2 tsp.
Turmeric Powder - 1 tsp.
Salt - To Taste
Oil - 3 tbsp.


Method:

Chop the brinjals/eggplants into 4 lengthwise to 3/4 of their total length
and soak in salted water to avoid discoloration.Keep it aside.

Heat a small pan and dry roast some cumin seeds and fenugreek/methi seeds
until a nice aroma exists.Take care not to brown it.Let it cool and grind it to
a powder.Set it aside.

Heat oil in another pan and season with mustards seeds and let it crack.

Then add cumin seeds,chopped green chillies,onions and pepper corns.
Fry for few minutes.

Then add the chopped brinjals/eggplants and fry for another 2 mins.

Add tamarind extract,salt,cumin-fenugreek(methi seeds) powder and
cook until the gravy thickens.

Check for the seasoning before removing from the stove.

Serve it hot with vegetable pulao/sambar rice/rasam rice/curd rice.
