Chicken Cutlet



Chicken cutlet is very simple and easy to make.Excellent mid-day or evening
snack.Kids would love it.Tastes good when its served hot.If it gets cold,warm
it in the microwave in a safe microwave dish/plate for 30 seconds to 1 minute
and then serve it with any sauce of your choice.

Ingredients:
Chicken Tenders/Breasts - 1 to 2 Lbs
Potatoes - 2 (Long - Boiled & Mashed)
Onions - 2 (Small - Finely Chopped)
Ginger-garlic Paste - 1 tsp.
Minced Green Chillies - 2(Long)
Mint Leaves - Few  (Finely Chopped)
Coriander Leaves - Few (Finely Chopped)
Cumin Seeds - 1 tsp.
Fennel Seeds/Sombu - 1 tsp.
Corn Flour - 1 tbsp.
Panko Breadcrumbs - 1 Cup
Eggs - 2 (Beaten with some water
                and a dash of salt)
All Purpose Flour/Maida - 1 Cup
Salt - To Taste
Oil - As Required (To Fry).

Method:

Clean and wash the chicken nicely.Boil some water and add the chicken
and let it cook 3/4 th or 75 %.

Let it cool and then mince or shred the chicken using a fork.Keep it aside.

Peel the skin off the potatoes and boil it for 10 mins with a pinch of salt.

Cool and mash it with a fork or potato masher.Set it aside.

Chop the onions,coriander leaves and mint leaves finely.

Mince the green chillies and make a paste of ginger and garlic.

In a large mixing bowl,add the shredded/minced chicken,mashed potatoes,
chopped onions,coriander leaves,mint leaves,minced green chillies,ginger-garlic
paste,cumin seeds,fennel seeds,corn flour and enough salt and mix it well until
everything is blended nicely.

Form it into the cutlet shapes and let it rest for a while.

In a small pan,beat the eggs nicely with a tbsp. of water and a dash of salt.

In another bowl,add all-purpose flour/maida with a pinch of salt.

Take the cutlets and dip it in the flour,then dip it into the beaten eggs and
finally roll the cutlets thoroughly on the panko breadcrumbs or homemade
breadcrumbs.

Heat a deep thick-bottomed vessel with oil and when its hot,add the cutlets
batch-by-batch and fry on both sides in medium flames until its golden brown
and crispy.

Drain the excess oil on a paper towel.Serve it hot with hot and sweet tomato
sauce or tomato ketchup or any sauce of your choice.


How to make homemade breadcrumbs ?

Take some day old white bread and process it in a food processor along with
the crusts for a minute or so or until the bread is powdery.


Note : Panko Breadcrumbs are available in Walmart.

           Plain or Seasoned Italian Breadcrumbs can also be used.They are
           available in Walmart.
