Carrot Poriyal

Ingredients:
Carrots -  4 (Grated)
Onion - 1(Medium)
Green Chillies - 2 (Long - Slited Lengthwise)
Mustard Seeds -  1 tsp.
Urad Dal - 1/2 tsp.
Curry Leaves - Few
Crushed Garlic - 1 tbsp.
Salt - To Taste
Oil - 1 tbsp.

Method:

Wash the carrots nicely and dry it with a kitchen towel.

Chop both the ends of the carrots and grate it finely.
Set it aside.

Chop the onions finely and keep it aside.

Heat a pan with some oil and season with mustard seeds
and let it crack.

Then add urad dal and curry leaves and fry for few seconds.

Add chopped onions,green chillies and a pinch of salt and saute
till the onions are transculent.

Now add the grated carrots and enough salt and stir it well.

Allow it cook till the carrots are tender and well done.

Add crushed garlic and cook for another 2 mins.

Check for the seasoning.

Adjust salt if necessary.

Turn off the stove and transfer the cooked carrots to a
serving dish.

Serve it with sambar satham or curd/yogurt rice.
