Aloo Masala



Ingredients:
Potatoes - 6 to 8 (Medium Sizes)
Onion - 1 (Large)
Tomatoes - 2 (Medium)
Ginger-garlic Paste - 1 tsp.
Turmeric Powder - 1/4 tsp.
Red Chilli Powder - 2 tsp.
Garam Masala - 1/2 tsp.
Coriander Leaves - Few
Salt - To Taste
Oil - 2 tbsp.


Seasoning Ingredients:
Mustard Seeds - 1/2 tsp.
Cumin Seeds - 1/2 tsp.
Curry Leaves - Few


Method:

Peel the skin off from the potatoes and wash it thoroughly.

Chop into medium pieces and soak it in lukewarm water to
avoid discoloration.Keep it aside.

Chop onion and tomatoes finely and set it aside.

Grind fresh ginger-garlic into a fine paste.Keep it aside.

Heat a pan with some oil and season with mustard seeds
and let it crack.

Then add cumin seeds and curry leaves and fry for 2 secs.

Add chopped onions and a pinch of salt and saute till the
onion is transculent.

Now add ginger-garlic paste and fry till the raw smell leaves.

Add chopped tomatoes and a pinch of salt and let it cook
till the tomatoes are soft.

Add turmeric powder,red chilli powder and enough salt
and saute till the mixture gets dry and the oil separates from
it.

Add chopped potatoes and enough water and stir it well.

Cover and cook until the potatoes are tender and the water
has evaporated completely.

Now add some garam masala and let it cook for another 2
to 3 mins.

Remove from the stove and garnish with some coriander leaves.

Serve  it hot with  plain rice/yogurt rice or chapathi/roti.
